
Chicken with Ginger (Kai Phad Khing)
Ingredients:
1 pound of chicken sliced in to small piece
2 tablespoons of sliced fresh ginger (small piece)
1 white onion thinly sliced
6 cloves of garlic coarsely chopped
3 tablespoons of vegetable oil
1 tablespoon of fish sauce
3 tablespoon of oyster sauce
1 tablespoon of sugar
1 tablespoon of soy sauce
1 tablespoon of soybean paste
2 fresh long red chilies cut into large pieces
1/2 cup chicken broth or water
5 green onion chopped
Directions:
1. Heat vegetable oil in a wok or large frying pan. When the oil is hot add on the garlic and stir-fry until it starts to brown. Then add chicken, and stir fry until meat is opaque on all sides, about 5 minutes
2. Add onion, ginger, fish sauce, sugar, oyster sauce, soy sauce, soybean paste. Stir-fry for 2 minutes. Add chilies and broth or water. Cook for 2 minutes and stir in scallions.
